Healthy Creamy Tomato Soup

Healthy Creamy Tomato Soup
A low-fat, vegetarian soup that everyone will love – passata and whole milk give a silky smooth finish. This easy Creamy Tomato Soup recipe is the perfect flavorful fresh tomato soup ever. It freezes and reheats very well.
Ingredients
- 2 tbsp coconut oil
- 2 cloves chopped garlic
- 1 onion (chopped)
- 2 carrots (grated)
- 1/2 cup raw red lentils
- 3/4 litre vegetable stock or water
- 1 bottle tomato passate or 1/2 litre of home made tomato puree. If you like more tomato you can add some concentrate.
- 1/2 cup coconut milk
- 1 pinch turmeric.
- 1 pimch salt and pepper
- 2 tbsp sunflower seeds
- 1 fresh parsley or basil
- 1 tbsp olive oil
Instructions
- Fry the onion, garlic, lentils, carrots in coconut oil, sprinkle with turmeric, add chili, pour water or broth, add tomato puree, Boil for about 10 minutes.
- Add salt, pepper, coconut milk, bring to a boil. Blend everything into cream, you may not mix it if you prefer this form. Sprinkle with sunflower seeds and parsleyor basil. Enjoy your meal!
